Main Composition: The main composition of this pigment is cyaniding-3-galactoside,and its structural formula is:
Appearance and solubility: This pigment is dark-purplish red powder, it is easy to be dissolved in ethanol-water solution. It shows pink in acid solutions, purplish-red in neutral solutions and blue-black in alkaline solutions.
Special Analysis: This pigment shows an absorption peak at 400 to 700nm,and its λmax525±5nm.
Color valence: Color valence is generally accepted in China to evaluate the contents of pigment.

Stability: This pigment is both relatively stable to light and heat.
Security: This pigment has been proved to be nontoxic by toxicity experiment.
Usage: According to Hygienic Standard of China GB-2760-1996, this pigment may be used in drinks, wines and foods such as candies and cakes. It can also be used in cosmetics. While use, first, it should be made into concentrated solution in acid solution (PH3.0), then, it s ready to be used.
Storage: This pigment should be kept dry, avoided straight light and sealed up after use. Its expiry date is one year.
